Can I track payments if I pay insurance premiums with bitcoin?

It would be a massive load off of our shoulders if we could pay the car insurances for both our cars using a Bitcoin debit card. My husband is an avid investor and we realised that this could greatly benefit us. He mention something about changing to Metromile and that they offer a Premier Shield’s Bitcoin program. My only worry is that we won't be able to clearly track our Bitcoin payments or provide proof of payments should the need arise.
